Double Baked Potatoes with Smoked Salmon and Chives

Prep time: allow 2.5 hours from initially turning on the oven to final serving
Ingredients
- 6 whole russet potatoes
- 8 oz 14% sour cream
- 3 tbs butter
- chopped chives
- bits of salmon
- panko (Japanese bread crumbs)
- grated/shaved parmesan cheese
- salt & pepper
Method
- Pre-heat oven to 400
- Poke the potatoes a few times with a fork then bake the potatoes whole for about an hour or until soft all the way through
- Remove the potatoes from the oven for 20 mins or so, or until they are cool enough to handle.
- Cut the potatoes in half, and scoop out the flesh into a large bowl. Mix/mash the flesh with the sour cream, butter, chives ans salmon bits.
- Refill 8 of the 12 skins (discard the other 4) with all of the inner potato mash so they over-flow then sprinkle with Panko and Parmesan cheese.
- Place on a baking sheet lined with wax/parchment paper and place back in the oven to bake until they are golden brown.
- Serve with mixed greens as a full meal
