Flatbread Smoked Salmon and Sundried Tomato Pizza

Ingredients

  • flat bread of your choice
  • 8oz of sundried tomatoes (in oil)
  • 3 garlic cloves
  • 12-16 fresh basil leaves
  • two large handfuls (plus more for later) of fresh arugula
  • red onion
  • 4 oz capers, drained and dried on a paper towel
  • 2 cups of grated mozzarella
  • salt & pepper

Method

  1. Preheat oven to 325
  2. Puree in a food processor the tomatoes, garlic, basil and 2 handfulls of arugula.
  3. Sautee the onions until soft. Then remove the onions and fry the capers until they turn dark green (approx 5 mins) – then drain the cooked capers on paper towel.
  4. Spread sundried tomato pesto on flat bread, then the rest of the fresh arugula, then the cheese, and then the fried capers.
  5. Bake at 325 until the cheese is melted and the crust is golden and crispy.
  6. Remove from oven and place smoked salmon on top of melted cheese and serve
