Smoked Salmon and Sundried Tomato Flatbread Pizza

Ingredients
- flat bread of your choice
- 8oz of sundried tomatoes (in oil)
- 3 garlic cloves
- 12-16 fresh basil leaves
- two large handfuls (plus more for later) of fresh arugula
- red onion
- 4 oz capers, drained and dried on a paper towel
- 2 cups of grated mozzarella
- salt & pepper
Method
- Preheat oven to 325
- Puree in a food processor the tomatoes, garlic, basil and 2 handfulls of arugula.
- Sautee the onions until soft. Then remove the onions and fry the capers until they turn dark green (approx 5 mins) – then drain the cooked capers on paper towel.
- Spread sundried tomato pesto on flat bread, then the rest of the fresh arugula, then the cheese, and then the fried capers.
- Bake at 325 until the cheese is melted and the crust is golden and crispy.
- Remove from oven and place smoked salmon on top of melted cheese and serve
