White Bean Burger with Smoked Salmon & Hoisin Glaze

Ingredients
Burgers:
- two cans of navy beans, drained and rinsed
- 1/4 cup Fine diced onion
- 3 garlic cloves
- 1/2 grated carrot
- 3 tsp chopped curly parsley
- 2 tsp chopped mint
- 3 tsp chopped dill
- 3 eggs
- salt and pepper to taste
- panko (Japanese bread crumbs)
- hoisin sauce
- burger buns or bread of your choice
- arugula
- mayo
Onion Rings:
- vidalia onions, sliced 1/4-inch thick
- buttermilk
- corn starch & salt mixed together
- frying oil
Method
- Mix first 9 ingredients together in a bowl, then add panko until the mixture feels stiff and dry. Let that stand for two hours.
- Shape into 5-oz patties, and bake until golden brown. While cooking, brush the patties with Hoisin sauce.
- Soak the onions in buttermilk for 15-20 minutes, then remove and dredge in the cornstarch/salt mix.
- Deep-fry the onions in a shallow pan until golden brown and drain on paper towel.
- Place the burger on the bun with some arugula and mayo. Top with more Hoisin and Smoked Salmon.
- Serve the burger along with the onion rings and enjoy!
