White Bean Burger with Smoked Salmon & Hoisin Glaze

Ingredients

Burgers:

    • two cans of navy beans, drained and rinsed
    • 1/4 cup Fine diced onion
    • 3 garlic cloves
    • 1/2 grated carrot
    • 3 tsp chopped curly parsley
    • 2 tsp chopped mint
    • 3 tsp chopped dill
    • 3 eggs
    • salt and pepper to taste
    • panko (Japanese bread crumbs)
    • hoisin sauce
    • burger buns or bread of your choice
    • arugula
    • mayo

Onion Rings:

  • vidalia onions, sliced 1/4-inch thick
  • buttermilk
  • corn starch & salt mixed together
  • frying oil

Method

  1. Mix first 9 ingredients together in a bowl, then add panko until the mixture feels stiff and dry. Let that stand for two hours.
  2. Shape into 5-oz patties, and bake until golden brown. While cooking, brush the patties with Hoisin sauce.
  3. Soak the onions in buttermilk for 15-20 minutes, then remove and dredge in the cornstarch/salt mix.
  4. Deep-fry the onions in a shallow pan until golden brown and drain on paper towel.
  5. Place the burger on the bun with some arugula and mayo. Top with more Hoisin and Smoked Salmon.
  6. Serve the burger along with the onion rings and enjoy!
