Salmon Lover’s Quiche

Serves: 4
Ingredients:
- 1 ready-to-use pie crust
- 250 g smoked salmon, in bite size pieces
- 3 eggs
- 3/4 cup half and half cream
- 3/4 cup milk
- 1/2 cup parsley, chopped
- 2 green onions, chopped
- 1/4 cup parmesan cheese, grated
- 1 tablespoon flour
- 1/2 teaspoon sea salt
- 1/4 teaspoon fresh ground pepper
Method:
- Set oven for 400 degrees.
- Cover pie crust. Bake covered in foil for 5 minutes, then an additional 10 minutes uncovered.
- While crust is baking, in a large bowl beat the eggs. Then stir in milk, half and half, parsley and salmon and green onions.
- In a small bowl combine cheese, flour, salt and pepper. Stir into egg mixture and then pour into baked pie crust.
- Reduce oven to 325 degrees and bake quiche 45 minutes or until a knife inserted into the center comes out clean.
- Cool for 5 minutes. Cut into wedges and serve immediately.
