Salmon Lover’s Quiche

Preparation Time:  70 minutes

Serves:  4

 

Ingredients:

  • 1 ready-to-use pie crust
  • 250 g smoked salmon, in bite size pieces
  • 3 eggs
  • 3/4 cup half and half cream
  • 3/4 cup milk
  • 1/2 cup parsley, chopped
  • 2 green onions, chopped
  • 1/4 cup parmesan cheese, grated
  • 1 tablespoon flour
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon fresh ground pepper

 

Method:

  • Set oven for 400 degrees.
  • Cover pie crust. Bake covered in foil for 5 minutes, then an additional 10 minutes uncovered.
  • While crust is baking, in a large bowl beat the eggs. Then stir in milk, half and half, parsley and salmon and green onions.
  • In a small bowl combine cheese, flour, salt and pepper. Stir into egg mixture and then pour into baked pie crust.
  • Reduce oven to 325 degrees and bake quiche 45 minutes or until a knife inserted into the center comes out clean.
  • Cool for 5 minutes. Cut into wedges and serve immediately.
