Smoked Salmon Nicoise Salad

Serves: 

Ingredients:

  • ½ small cucumber, halved, seeded and thinly sliced
  • 12 small cherry or grape tomatoes, halved
  • 150 g smoked salmon, cut into 2-inch pieces
  • 10-12 small red potatoes, scrubbed and halved
  • 6 oz. green beans, trimmed and halved
  • 2 tablespoon mayonnaise
  • 1 tablespoon white wine vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • ½ tsp dried dill weed
  • 6 cups salad greens
  • Salt
  • Pepper

Method

  • Place a large bowl of iced water next to the stove top.
  • Bring to boil water a large saucepan of water.
  • Place a steamer basket in the water. Add potatoes and steam for about 10 to 15 minutes, until tender. With slotted spoon transfer to ice water.
  • Steam beans for about 5 minutes until tender, and then transfer to ice water.
  • Drain and dry both on paper towel.
  • Whisk mayonnaise, vinegar, lemon juice, Worcestershire sauce, mustard, dill weed, salt and pepper in a large bowl.
  • Add potatoes, beans other vegetables and salad greens. Toss.
  • Divide salad and salmon between two plates.
