Smoked Salmon Nicoise Salad

Ingredients:
- ½ small cucumber, halved, seeded and thinly sliced
- 12 small cherry or grape tomatoes, halved
- 150 g smoked salmon, cut into 2-inch pieces
- 10-12 small red potatoes, scrubbed and halved
- 6 oz. green beans, trimmed and halved
- 2 tablespoon mayonnaise
- 1 tablespoon white wine vinegar
- 1 teaspoon lemon juice
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- ½ tsp dried dill weed
- 6 cups salad greens
- Salt
- Pepper
Method
- Place a large bowl of iced water next to the stove top.
- Bring to boil water a large saucepan of water.
- Place a steamer basket in the water. Add potatoes and steam for about 10 to 15 minutes, until tender. With slotted spoon transfer to ice water.
- Steam beans for about 5 minutes until tender, and then transfer to ice water.
- Drain and dry both on paper towel.
- Whisk mayonnaise, vinegar, lemon juice, Worcestershire sauce, mustard, dill weed, salt and pepper in a large bowl.
- Add potatoes, beans other vegetables and salad greens. Toss.
- Divide salad and salmon between two plates.
